Pancetta & Crispy Shallot Shokupan

Crispy shallots are in almost everything I grew up eating in Taiwan. They have a way of elevating everything, from vegetables and soups to fried rice etc., but my favourite has to be lu rou fan!! (Taiwanese braised pork rice). To recreate the nostalgic flavours, I paired crispy shallots with pancetta for that savoury, rich, and slightly fatty flavour reminiscent of the pork belly in lu rou fan.
